Best Mushroom Lasagna

Red Tomato Sauce Organic Mushroom Lasagna

Mushrooms add more flavor and nutrition to this classic. 

Ingredients

12 lasagna noodles, cooked

1# mozzarella cheese, shredded

1/2 c. Parmesan cheese, grated

Red Sauce:

  • 1# Ground Pork
  • 1# Ground Beef
  • 1# Fat Moon Mushrooms, chopped
  • 1/4 c. red wine
  • 1/2 c. diced onions
  • 12 oz. tomato paste
  • 16 oz Farmer Dave's Marinara sauce
  • 16 oz Chopped Tomatoes, canned or fresh
  • 2 T. sugar
  • 1 T. Italian seasoning
  • 1/2 t. fennel seeds
  • 2 t. salt, or to taste
  • 1/2 t. ground black pepper
  • 1/4 c. chopped fresh parsley

 

Cheese layer:

  • 16 oz. ricotta cheese 
  • 1 egg
  • 1/4 c. chopped fresh parsley

Prepare sauce: 

  • Brown ground pork & ground beef
  • Sautee mushrooms. Deglaze pan with red wine
  • Sautee onions & garlic until clear and fragrant
  • Combine all sauce ingredients in a pot and simmer for an hour

Layer in 9x13 pan: 

  • First layer: 1 1/2 c. sauce
  • Middle layers: Noodles, Ricotta cheese, Sauce, Shredded cheese (3x)
  • Final layer: Noodles, sauce, shredded cheese

Bake at 350 for 1 hour, covered with foil. 

Uncover and bake for 15 minutes
