Mushroom lasagna is a delicious and satisfying vegetarian twist on the classic Italian dish. Layers of lasagna noodles, savory mushrooms, and creamy cheese come together to create a hearty and flavorful meal.
Ingredients
12 Lasagna Noodles, cooked
1# Mozzarella Cheese, shredded
1/2 c. Parmesan Cheese, grated
- 1# Ground Pork
- 1# Ground Beef
- 1# Fat Moon Mushrooms, chopped
1/4 c. Red Wine
1/2 c. Diced Onions
12 oz. Tomato Paste
16 oz Farmer Dave's Marinara Sauce
- 16 oz Chopped Tomatoes, canned or fresh
2 T. Sugar
1 T. Italian Seasoning
1/2 t. Fennel Seeds
2 t. Salt, or to taste
1/2 t. Ground Black Pepper
1/4 c. Fresh Parsley, chopped
16 oz. Ricotta Cheese
1 Egg
1/4 c. Fresh Parsley, chopped
Red Sauce

Directions
Prepare Sauce
Brown ground pork & ground beef.
Saute mushrooms. Deglaze pan with red wine.
Saute onions & garlic until clear and fragrant.
Combine all sauce ingredients in a pot and simmer for an hour.
Create Layers
Create your first layer: 1 1/2 c. sauce.
Add the middle layers: Noodles, Ricotta cheese, Sauce, Shredded cheese (3x).
Make the final layer: Noodles, Sauce, Shredded Cheese
Bake Lasagna
Bake at 350 degrees F for 1 hour, covered with foil.
Uncover and bake for 15 minutes.
