Mushroom & Sweet Potato Shepherd's Pie
This classic comfort food has been dressed up with mushrooms & sweet potatoes as well as a vegetarian option.
Ingredients
Topping:
- 5 sweet potatoes
- 1/4 c. butter
- 1 t. salt
Filling:
- 1# Fat Moon Mushrooms, chopped
- 1 onion, chopped
- 3/4 c. steel cut oats
- 1 bay leaf
- 1 t. salt
- 1 T. olive oil
- 1 large carrot, chopped
- 1 celery stalk, chopped
- 2 garlic cloves, minced
- 3/4 c. vegetable broth
- 1/4 c. red wine
- 1 T. tomato paste
- 1 T. soy sauce
- 1 t. smoke paprika
- 1/4 c chopped fresh parsley
- 2# ground beef OR 4 c. garbanzo beans OR 1# ground beef + 2 c. garbanzo beans
Topping:
- Peel and chop sweet potatoes
- Boil with salt until soft
- Mash sweet potatoes with butter. Set aside
Filling:
- Brown Ground beef, if using. Set aside.
- Brown mushrooms & onions. Deglaze pan with red wine
- Combine all sauce ingredients and bring to a simmer for 15 minutes
Assemble
- Spread filling in 9x13 pan
- Top with mashed sweet potatoes
Bake at 350 for 30 minutes.
