Mushroom and sweet potato shepherd's pie is a comforting and hearty vegetarian twist on the classic British dish.
This recipe is packed with flavorful ingredients like mushrooms and ground beef, as well as hearty vegetables, all topped with a creamy sweet potato mash.
Ingredients
5 Sweet Potatoes
1/4 c. Butter
1 t. Salt
- 1# Fat Moon Mushrooms, chopped
1 Onion, chopped
3/4 c. Steel Cut Oats
1 Bay Leaf
1 t. Salt
1 T. Olive Oil
1 large Carrot, chopped
1 Celery Stalk, chopped
2 Garlic Cloves, minced
3/4 c. Vegetable Broth
1/4 c. Red Wine
1 T. Tomato Paste
1 T. Soy Sauce
1 t. Smoked Paprika
1/4 c Fresh Parsley, chopped
2# Ground Beef
4 c. Garbanzo Beans
1# Ground Beef + 2 c. Garbanzo Beans

Peel and chop sweet potatoes, then, boil with salt until soft.
Mash sweet potatoes with butter. Set aside.
Filling
Brown Ground beef, if using. Set aside.
Brown mushrooms & onions. Deglaze pan with red wine.
Combine all sauce ingredients and bring to a simmer for 15 minutes.
Assembly
Spread filling in 9x13 pan.
Top with mashed sweet potatoes.
