Mushroom & Sweet Potato Shepherd's Pie

Mushroom Shepherd's Pie with beef and sweet potatoes  Mushroom Shepherd's Pie with chick peas garbanzos

This classic comfort food has been dressed up with mushrooms & sweet potatoes as well as a vegetarian option. 

Ingredients

Topping: 

  • 5 sweet potatoes
  • 1/4 c. butter
  • 1 t. salt

Filling: 

  • 1# Fat Moon Mushrooms, chopped
  • 1 onion, chopped
  • 3/4 c. steel cut oats
  • 1 bay leaf
  • 1 t. salt
  • 1 T. olive oil
  • 1 large carrot, chopped
  • 1 celery stalk, chopped
  • 2 garlic cloves, minced
  • 3/4 c. vegetable broth
  • 1/4 c. red wine
  • 1 T. tomato paste
  • 1 T. soy sauce
  • 1 t. smoke paprika
  • 1/4 c chopped fresh parsley
  • 2# ground beef OR 4 c. garbanzo beans OR 1# ground beef + 2 c. garbanzo beans

Topping: 

  • Peel and chop sweet potatoes
  • Boil with salt until soft
  • Mash sweet potatoes with butter. Set aside

Filling: 

  • Brown Ground beef, if using. Set aside. 
  • Brown mushrooms & onions. Deglaze pan with red wine
  • Combine all sauce ingredients and bring to a simmer for 15 minutes

Assemble

  • Spread filling in 9x13 pan
  • Top with mashed sweet potatoes

Bake at 350 for 30 minutes.
