Ingredients
1 tablespoon Butter
1 cup chopped Fat Moon Mushrooms
1 cup sliced Onions
1 cup Shredded Cheese
1/2 cup Spinach torn
5 Eggs
1/2 cup Light Cream or Milk, or more if the mixture is too thick
1/8 teaspoon Crushed Black Pepper
1/2 teaspoon Salt
Directions
Preheat oven to 375.
Lightly grease your baking dish or muffin pan with spray or oil, and set aside.
Saute the chopped mushrooms and onions in a pan with the tbsp of butter until the onions are translucent and the mushrooms have released most of their liquid and are soft.
Crack the eggs in a bowl and beat as if making scrambled eggs. Add salt, pepper, and any herbs that you enjoy. Add in shredded cheese, stir well, and add mixture to grease pans.
Cook until the mixture is cooked all the way through. Enjoy!
