Ingredients
- 4 slices of bread (toasted, any type you prefer: sourdough, whole grain, etc.)
- 4 oz Enoki mushrooms
- 1 tbsp olive oil (for sautéing mushrooms)
- 4 leaves of lettuce (romaine or butter lettuce work well)
- 1 large tomato (sliced)
- 2 tbsp vegan mayo or regular mayo
- 1 tsp Dijon mustard (optional)
- Salt and pepper to taste
Directions
Heat skill to medium high heat
While skillet is heating, gently break enoki mushrooms into clusters
When the skillet is hot, add enoki mushrooms in one layer. Do not crowd the pan.
While the mushrooms are cooking, toast the bread and slice the tomato
When mushrooms are crispy, remove from the pan and assemble sandwiches
