BBQ pulled mushroom is a vegetarian version of the classic pulled pork recipe. This recipe is a great option for vegetarians, vegans, or anyone looking for a healthier alternative to traditional BBQ fare. It's also easy to make and perfect for a summer barbecue or a casual weeknight dinner.
Ingredients
2# Fat Moon Mushrooms, ideally Oyster and/or Lion’s Mane
1/4 c. Olive Oil
2T Paprika
2/3 c. BBQ Sauce
1 Medium Onion, thinly sliced
1 Lime, juiced
1/2 t. Salt
Pulled "Pork"
Pickled Onions
Directions
Shred 2# Oysters & Lion’s Mane.
Toss with olive oil and paprika.
Roast in oven or on the grill for 20 minutes at 400 degrees F.
Mix roasted mushrooms with BBQ sauce and return to oven or grill until heated.
Make your pickled onions! Mix onion, lime juice & salt. Marinate in the fridge for 1 hour or more.
