BBQ Pulled Mushrooms (Faux Pulled Pork)

With the summer upon us, here's a tasty vegan recipe to share at picnics this summer. 


2# Fat Moon Mushrooms, ideally oyster and/or lions mane

1/4 c. olive oil

2T paprika

2/3 c. BBQ sauce

And for the pickled onions on top: 

1 medium onion, thinly sliced

1 lime, juiced

1/2 t. salt


Shred 2# oysters & lions mane 

Toss with olive oil and paprika

Roast in oven or on the grill (we like our Big Green Egg!) for 20 minutes at 400 degrees

Mix roasted mushrooms with BBQ sauce and return to oven or grill until heated

Pickled onions: 
Mix onion, lime juice & salt. 
Marinate in the fridge for 1 hour or more. 
Shredded mushrooms  Shredded mushrooms with paprika and olive oil. Ready to Roast at 400 degrees for 20 minutes.
