This scrumptious vegetarian twist on calamari comes to us from the creative @seemabites! When asked about this recipe, she said:
"I recently tried Comb’s Tooth mushrooms and was completely blown away. They have the most amazing flavor!
I’ve been using them to make this quick and nutritious appetizer, which tastes just like Rhode Island style calamari to us. I could eat it every day!
It has a yummy seafood flavor, which I think is pretty cool, considering it looks like coral!"
Ingredients
2 cups Comb’s Tooth Fat Moon Mushrooms, cut into bite-sized pieces
-1/2 cup Tapioca Flour
1/2 tsp Onion Powder
1/4 tsp Salt
1 Pastured Egg (or 3-4 Tbsp Aquafaba, if vegan)
-Oil for frying
Fermented Hot Sauce
Lemon
Salt to Taste
Directions
Add the flour, seasoning, and salt into a shallow dish and toss to combine.
Whisk the egg in a separate shallow bowl.
Coat the bottom of a small deep pot with about 2 Tbsp oil and turn the heat on to medium.
Dip a few of the mushrooms in the egg and then in the flour mixture.
Shake off the excess flour and place the mushrooms on a plate.
Continue coating all of the mushrooms.
When the oil is hot, place a few mushrooms into the pot and begin frying.
Once the mushrooms are brown on the underside, flip them over and fry until the other sides are brown.
Transfer the mushrooms to a plate lined with a paper towel and continue frying the next batch of mushrooms.
To plate, place mushrooms on a plate, sprinkle with a little salt, squeeze of lemon, and drizzle of hot sauce. Enjoy!

Top with lemon and fermented hot sauce for extra flavor!
