Ingredients
Korean Glass Noodles
Fat Moon Shiitakes, Blue Oysters, and Lion's Mane Mushrooms
Cucumber
Carrot
Onion
Soy Sauce
Sesame Oil
Cooking Oil
Garlic, minced or powdered
Salt and Pepper, to taste
Sesame Seeds
Directions
Chop your cucumbers, carrots, and onions in thin strips. Use a mandolin if you can, but watch out for your fingers!
Chop your Fat Moon mushrooms into bite-size pieces.
Bring a pot of water to a boil, and cook your noodles according to package directions.
Sauté your cucumbers, carrots, and onions in a separate pan with a dash of vegetable oil. Set the cooked vegetables aside.
Sauté your Fat Moon mushrooms with a dash of cooking oil until cooked.
Toss your cooked noodles, vegetables, and Fat Moon mushrooms with a splash of soy sauce and sesame oil in a large bowl.
Season with garlic, salt, and pepper to taste.
Garnish with sesame seeds and enjoy the noodles and vegetables on their own or over some rice!
