Ingredients:
Noodles: Korean Glass Noodles
Mushrooms: Fat Moon Shiitakes, Blue Oysters, and Lion's Mane
Vegetables: Cucumbers, Carrots, Onions
Sauces: Cooking Oil, Soy Sauce, and Sesame Oil
Seasonings: Garlic (Minced or Powdered), Salt, Pepper
Garnish: Sesame Seeds
How to Make:
1. Chop your cucumbers, carrots, and onions in thin strips. Use a mandolin if you can, but watch out for your fingers!
2. Chop your Fat Moon mushrooms into bite-size pieces.
3. Bring a pot of water to a boil, and cook your noodles according to package directions.
4. Sauté your cucumbers, carrots, and onions in a separate pan with a dash of vegetable oil. Set the cooked vegetables aside.
5. Sauté your Fat Moon mushrooms with a dash of cooking oil until cooked.
6. Toss your cooked noodles, vegetables, and Fat Moon mushrooms with a splash of soy sauce and sesame oil in a large bowl.
7. Season with garlic, salt, and pepper to taste.
8. Garnish with sesame seeds and enjoy the noodles and vegetables on their own or over some rice!
