This Lion's Mane Mushroom Rice Noodles recipe, brought to us by Lisa Engel, is a perfect choice for those seeking a flavorful and wholesome meal option.
Ingredients
7 oz Linguine Style Dried Rice Noodles (ex. Flying Horse brand, large size noodles)
2 tbsp Olive Oil, or more for frying
2 cups Fat Moon Lion's Mane, shredded by hand
1/2 Yellow Onion, sliced
1/2 cup Red, Orange or Yellow Bell Pepper (sweet peppers), cut into strips
3 Eggs, lightly beaten
10 Extra Large (21-25) Raw Shrimp, thawed, deveined, shells and tails removed
Salt, to taste
1/4 cup Fish Sauce
1/3 cup Lime Juice, or to taste
1 tsp White Sugar
1/2 tsp Chili Garlic Sauce
Green Onions, chopped

Directions
- Combine all of the ingredients for the sauce. Set aside.
Boil rice noodles until tender. Drain and set aside.
Heavily salt two inches of water in a pot. Bring to a boil. Drop in the shrimp, cover and immediately remove from the heat. Let sit for 1 1/2 minutes, drain and set aside.
Heat oil over medium heat in a large cast iron pan. Add Lion's Mane, onion, and sweet peppers. Fry until everything is tender, about 5 minutes. Push to the side.
Add eggs. Let sit until just cooked, about two minutes. Break up into strips and chunks.
Add sauce and shrimp if using. Toss to coat. Add cooked rice noodles and toss to coat. Cook until sauce is absorbed, about one minute.
- Serve sprinkled with green onions.
Recipe Note
Lion's Mane absorbs flavor. You can add it any time before the noodles.
The sauce is a version of Nuoc Cham, a standard Vietnamese sauce. Use whatever ingredient ratios work for you. We like a lot of acid so I go heavy on the lime juice.
This method is a good way to control the cook on the shrimp if you use it. Don't let it sit in the hot water for more than 1 1/2 minutes as it will continue to cook after it is drained.
