Hot Pot with Fresh Mushrooms

Using mushrooms from our New Year's "Get and Give" program, Kathy whipped up this scrumptious hot pot for her New Year's festivities.

Suggested Ingredients:

Broth: Packaged broth available at local grocers or available for purchase at a Hot Pot Restaurant

Protein: Thin Sliced Lamb, Beef

Mushrooms: Fat Moon Shiitakes, Blue Oysters and Lion's Mane

Tofu: Fried Triangles, Tofu Skin, Tofu Skin Rolls

Vegetables: Bok Choy, Watercress, Napa Cabbage

Noodles: Fresh Udon Noodles, Rice

Aromatics: Garlic, Scallions

How to Make:

1. Bring broth to a boil in the Hot Pot.

2. Once boiling, add any combination of the ingredients listed above to the Hot Pot.

3. Serve the broth and ingredients over a bowl of rice.

4. Add noodles to leftover broth at the bottom of the bowl to soak up all of the flavors!
